journal entry

Last weekend I...

exercised twice...saw "Mirror Mirror" with family, and loved it...
went to two Easter egg hunts...
ate way too much delicious cake (chocolate and blueberry lemon and orange chocolate)...
sewed buttons on a thrifted dress to wear for Easter...
practiced "O Divine Redeemer" like crazy, finally mastering my part Saturday night (it was so hard)...
sneaked way too much Easter candy (and not even good stuff, those malt ball eggs!)...
held a cute baby for a long time (until he finished a little project in his diaper, then it was Mommy time)...
curled 5-year-old hair, it turned out so cute...
sang beautiful songs about the Savior in church...
took a big ol' nap with the husband...
made Brazillian limeade (traditional lime and strawberry lime, recipe to follow) and cilantro lime brown rice...
watched a bunch of little kids play outside for the first time this year, enjoying the warmth...
lost at Ticket to Ride, but had lots of fun playing with family...

Brazillian Limeade:

5 limes
7.5 cups water
1 1/4 cups sugar
1/3 c + 2 T sweetened condensed milk

Wash the limes, cut off the ends, and cut into four wedges. In blender, combine lime wedges, sugar, condensed milk, and 5 cups water (or as much as your blender will hold). Pulse blender several times. Then pour through strainer to remove lime rinds/pulp. Add remaining water (if any) to limeade, and stir well. Serve chilled, preferably over ice.

For Strawberry Limeade:

After straining out lime pulp, return liquid to blender and add 8 washed strawberries, leaves removed. Blend well, till very small or no chunks remain. Pour into pitcher, and leave the last few teaspoons in the blender (they will be very seedy). Add remaining water, if any. The strawberry limeade was definitely the hit of the night! I bet mango would be amazing, too.
