Apple walnut crasin spinach salad

No green smoothie today, so instead I whipped up a delicious salad, with a surprise ingredient!

I started with spinach, crasins, half an apple, and walnuts, and was about to dress out with some homemade basic balsamic vinaigrette, when I had a brilliant idea. Chia seeds!

I always put them in my smoothies, so I just added a tablespoon or so to my dressing. It turned out really well.

(also notice the cute penguins on my tupperware. That is all.)

Just got some new shellac colors. This is one I normally never would have chosen, but I love it! And I'm excited to not have to repaint for two weeks. :)

Eat oatmeal everyday.
Eat a green smoothie everyday.
Exercise everyday.
Clean some everyday.
Floss everyday.
Read some everyday.

To do this I have to make oatmeal on weekends and smoothies every night. I have to prep my lunch and clothes the night before, and wake up to work out at five. And I have to not let tv govern my time. This is what I need to do to feel good. And to re-lose 10 pounds.

I can do it.

Our favorite gelato place, Bellissimo, closed down awhile back, so this weekend we tried somewhere new. It was that place on soda row in daybreak. The gelato was not house made, and not very good, but it was fun to try new things.

Birthday Boy

For A's birthday, we went to Setabello. Oh my goodness, I love that place. And arugula. And A, even though he's getting old. ;-)

you've had a birthday

{Mr. A, on his favorite ride at Disneyworld: Toy Story Mania!}

Today is A's birthday.

Sunday we celebrated with his family, and I made the brownies/cupcakes pictured before. Today I made him french toast and a green smoothie for breakfast, and hopefully we'll go somewhere fun this weekend as a last celebration.

Honey, you are the best. I love you so much, and look forward to celebrating many many more birthdays with you.

killer brownies, the recipe.

Peanut butter, chocolate chip cookie, brownie, AND marshmallow? Yup, this bar has all of those, and is sinfully delicious. And it comes together super fast because you can use brownie mix and pre-made cookie dough! You could  probably use any candy bar, or even Oreos instead of peanut butter cups, whatever tickles your fancy. But be aware, you may want a tall glass of milk to enjoy along with your killer brownies.

2 packages refrigerated cookie dough (I used pillsbury brand, with extra big chocolate chips)
2 bags full size Reeses cups
1 fudge brownie mix (sub applesauce for oil)
1 bag mini marshmallows

Preheat oven to 350 degrees.

Spread cookie dough evenly in the bottom of an 9 by 13 pan. Unwrap Reeses, and arrange on top of cookie dough. You should have a few extra for snacking. Prepare brownie batter as directed. Pour over reeses, being careful to spread it into the corners. Bake for 30 minutes. I only did 20, and it was pretty gooey in the middle. Check it at 20 just to be safe.

(To be honest, I don't think the marshmallows added much. Instead I'd do frosting, if I had to do it over again).

If you want to do marshmallows, cover the top of the hot brownies with marshmallows and return to the oven for five minutes, or until slightly toasted. Let them cool completely before cutting. These are super rich, but yummy! So many combinations would be good, think Ghiradelli caramel squares or heath bars!
