Midnight Show

I just found out that we'll be in Argentina when the newest HP comes out. So sad. I would have LOVED to see that at midnight. Midnight showing crowds are always the most fun.

So I know it is only Tuesday, but here's some more randomness.

Yesterday I made some DELICIOUS eggplant parmesan, sans frying pan. Here's how it went down.

Peel eggplants (depending how big they are, you could use 2-3) and cut them into 1/4 inch slices. Start layering them in an oiled (with Pam) pyrex casserole dish (the big kind). After the first layer of eggplant, spread with tomato sauce and a sprinkle of shredded mozzarella. Add another layer of eggplant, sauce, and mozzarella. I did a third layer, with a lot of cheese on top, but the eggplant on the top layer didn't get as cooked as I would have liked, so two may be enough. Be generous with the sauce! Parmesan (or in my case, asiago) is also delicious on top. Cook at 350-375 for a long time. I started with probably 30 minutes and then kept on checking every 5 minutes till the eggplant was sufficiently cooked (easily speared with a fork). Wait as long as you can endure before eating, it is hot! And so good.

Tonight we are having spaghetti squash with spaghetti sauce. Mmmm. And maybe some casaba melon on the side.

We have a church Halloween party this Saturday. I'm trying to convince my parents to come and bring my hilarious niece and nephew. I think she wants to be a princess/kitty/dog (can't decide) and he wants to be Zeus. I saw a picture on Martha's site (Martha Stewart, that is) of a little girl dressed up as Mrs. Butterworth. Her brother was a waffle. Funniest thing I've ever seen.

I've been researching for the thesis I'll be writing next semester, and most lately read this article called "Mormon Pursuit of the Agrarian Ideal." It was fascinating. All you Mormons out there, the prophets have spoken: time to start gardening. Time to "be fruitful, multiply and replenish the earth (soil)." Sort of refreshing to find an alternate interpretation of that biblical passage, and by the great grandson of Brigham Young.
