You guys. Let me just tell you. I love almond milk. It is so delicious. Lately I've been making smoothies with it that are more like milkshakes than smoothies. It is especially decadent with the sweetened vanilla almond milk, though still delicious with the unsweetened.

Version 1:

1 cup almond milk
1 or 2 handfuls of spinach
1 cup frozen blueberries
1 scoop ground flax (optional)

Add all ingredients to blender, blend until smooth. Serves one.

Version 2:

1 cup almond milk
1 banana
1 or 2 handfuls of spinach
2 T peanut butter
1 scoop ground flax (optional)
4 ice cubes

Add all ingredients to blender, blend until smooth. Serves one.


I also eat it on either oatmeal or Ancient Grains Granola (from Costco) every morning.

For the oatmeal:

1/2 cup quick oats
1/2 cup water
1/2 cup blueberries
1 scoop ground flax
1 handful walnuts
almond milk, to taste
salt

In a bowl, combine water, oats, blueberries, and a few shakes of salt. Microwave 2-3 minutes, or until oats are cooked. Add flax and walnuts, stir, and top with almond milk.

For the granola:

I top my granola with a handful of walnuts, a handful of dried cranberries, a sliced banana, a scoop of flax, and almond milk. Enjoy!
