tricksy

I think I picked that word up from Golem in The Hobbit, and it perfectly describes the weather. Isn't March supposed to be "in like a lion, out like a lamb?" Well, I think Mother Nature got a little confused this year. One day I wore sandals, the next it was back to wool coats and clompy boots.

We're cat sitting right now, and will be for the next week. It's not too bad, with the exception of the constant runny nose. The cat was very stand-offish the first few days, but she must have come to grips with the idea that we're her new owners, because this morning she rubbed against my legs for about ten minutes, and followed me everywhere.

We've had some good culinary adventures as of late, (wings, enchiladas, spoon roast, crepes, etc.) and took pictures too. Those will have to come later. Last night, at the advice of my brother J and sister A, we experimented with our ice cream machine. It was so fast and so delish!

Ingredients:

Jello instant pudding mix (we tried pistachio)
2 cups milk (as called for on the package)

Basically, you make the pudding, which requires 2 minutes of whisking, and then you pour it into your counter top ice cream maker. It becomes ice cream consistency in a matter of minutes, and is so good. I can't wait to try more flavors.

Yum, ice cream!! Pistachio, no less! Put it between two chocolate cookies, roll chopped pistachios on the outside ... oh, my.

Ooh, that's a good idea. I've also been thinking about using it in a pie of some sort. Here are my two ideas: Oreo crust with chocolate frozen pudding filling, whipped cream on top, and maybe some Oreo chunks; frozen banana cream pie, which is basically the same as regular, but with frozen pudding.
