If you're wondering what we've been eating...





Here's an update:


Fantastic Roast Beef, basically just a spoon roast from Harmons crock-potted all day, and so delish.

Next are cheese enchiladas, which were better left over. (There were way too many onions, and even though I cooked them as directed, they were crunchy.)

Peanut chicken with asian style cabbage slaw, this is what I took to a neighbor who had just had a baby. They asked for the recipe, which was the ultimate compliment. We really liked it, and they must have too.

No, we haven't been eating cat, but this picture was just in with the foodtogrophy. This is a picture of the kitty we housed for a week, who finally did warm up to us. She's curled up next to A in the pic, pretty cute.

The instructions on those onions were not too specific. Next time, cook them until they are transparent and maybe even starting to caramelize a little. Add the garlic toward the end so it doesn't burn. That should solve your problem.

I felt pretty stupid, because I read most of the comments, and someone else posted about the onions being crunchy, so I tried to follow the recipe exactly. I think the onions in the salsa compounded the problem. I think in the future, I would puree the enchilada sauce. For some reason i just don't think enchilada sauce should be that chunky. Thanks for the advice!

Oh, funny thing, in the peanut chicken picture you can kind of see a pill pack thing, that was the allergy medicine I ate like candy to tolerate the kitty hair.
