Tribute

As of today, my parents have been married for 35 years. That's a happy thing. My mom always joked about having fireworks on her wedding day, but the temple wasn't open on the Fourth of July, so they settled for the third. I don't have pictures of their wedding on my computer, so here are some of them with me at my wedding. Happy Anniversary Mom and Dad!




In tribute to my mom, I made a classic, something I remember eating as a kid, and still love today. Here it is, hot dogs, mashed potatoes, and cheese. Sounds gross to most people, but seriously, try it! A gives it a ten out of ten. We paired these stuffed dogs with more kababed veggies and cut up watermelon, a bit of dejavu from last night, but still good.



Instructions for hot dogs with mashed potatoes and cheese:

Slice hot dog in half, leaving just enough uncut so it stays in one piece, but not too much or it will be difficult to get it to stay spread open when trying to fill with potatoes. Spoon mashed potatoes into hot dogs. Sprinkle with cheese, cheddar is the best. Bake at 350 degrees until cheese is melted. This works with leftover hotdogs, which is what we had tonight, and leftover mashed potatoes. Left over potatoes have to stay in the oven a bit longer so they get warm. Delicious with ketchup.

Just had this tonight with my daughters, and now I'm writing about it too! Glad to see that my family isn't the only one out there that enjoyed this "comfort food"!

Jer, I enjoyed reading your post! Most people think it sounds really gross, but once they try it are converted, simply because it is delicious. I find it's really good with fancy ingredients, like Colossimos sausages. What a classic.
