love affair
You guys, I love arugula. If there is a dish with arugula on a restaurant menu, you can be sure that I will order it.
Yesterday I made a salad from a Pinterest recipe, it had arugula, mango, avocado, macadamia nuts, and a tangy dressing. I liked it so well that I made a variation if it for lunch today. I did not have another mango, so I subbed an orange, and the only avocado I had was mashed, so I just mixed it into the dressing.
Here are the details:
(serves two)
1 orange
2 large handfuls of arugula
1 handful macadamia nuts
For the dressing:
(measurements are approximate, I just eyeballed it and seasoned to taste)
Olive oil (3T)
Cider vinegar (1T)
Dijon mustard (1t)
Black pepper (dash)
Garlic powder (dash)
Lemon juice (2t)
Orange juice (1t)
Agave (1t)
Avocado, mashed (1/2)
Cut the peel off the orange, then cut it in half and slice the halves. Use any juice left on the cutting board in the dressing.
Whisk together dressing ingredients in small mixing bowl. In a medium mixing bowl, toss the arugula in the dressing (I only used half the dressing).
Divide the dressed greens between two plates, top with orange slices and macadamia nuts. Try not to gobble it up too fast.
