breakfast baking
As promised, here's a recipe! I made a cake this morning, for a meeting at work today. One of the women who came turned 50 today, and her favorite cake is pound cake, so that is what I made.
Here's the recipe, via the 1966 Better Homes & Gardens Pies and Cakes book:
3/4 cup butter
3/4 cup sugar
1 teaspoon vanilla
1/2 teaspoon grated lemon peel (I subbed orange)
3 eggs
1 1/4 cups sifted flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Cream butter; gradually add sugar, creaming till light, about 6 minutes. Beat in vanilla and peel. Add eggs, on at a time, beating well after each. Sift together dry ingredients. Stir in. Grease bottom only of 9x5x3-inch pan; turn in batter. Bake at 350 degrees for 50 minutes or till done. Cool in pan. Dust with confectioners' sugar.
The cake had nice flavor and texture, but I thought it turned out a little dry. Next time I'll mix and bake less, add more orange peel, and maybe make an orange glaze to go on top.
